Let's say an airline decides to retire an aircraft, they then send it to Mojave (just an example). What would then happen to the interior? Like seats, electrics, toilets and gally's. I always thought they had it taken out then a new owner would install their interior, is this true?

If the aircraft is old and on it's last legs so to speak any valuable parts will be taken off the aircraft and scrapped (parted out) but if it is one that could be sold on at a later date to get the best money for it it would normally be left intact.
If the airliner sits around for some time without a new buyer making an approach to buy it then if the owner needs some seats or overhead bins or whatever it may be taken off the stored airliner but if it is still a salable airliner we are always reluctant to do this for sods law states that when you do this a buyer comes forward with an offer to buy.

I'd love to buy an old cockpit (with controls) of lets say a 737 take out the windows put in some large tv screens, install some hydroulics agood sound system a powerfull computer with FS2004 or FSX then configure all the cockpit controls so then I would have my own real life simulator. Or even better buy a whole plane and put on hydraulics and charge for people to fly it and use the cabin as a restaurant/bar with all classes. Everybody has a dream

captain bill is exactly right. It all depends on the age of the aircraft.
If it's young or cabin in very good conditions, everything will be intact when sold to the new operator(Don't forget 'owner' can be just another scrap yard but operator will actually fly the thing again). e.g. Oasis HK retain all cabin stuff when they bought their 744s after they were retired fm SQ and NH. This makes sense as Oasis HK's 744s fm NH, for instance, are only 8-9 yrs old(Much younger than almost all BA or CX 744s still flying).
If cabin is older but the airframe is still airworthy, existing operator will often take out the cabin stuff, retain them for cabin crew training, use them in the 'mini-cabin' on its own freighter or sold them as parts. The new operator will either convert the airplane into a freighter or install newer cabin(CX did both when they bought some retired 744s fm SQ). Some new operators will actually retain the old cabin and used the airplane for cheap charter ops/low-cost flights(e.g. Orient Thai bought JL's retired 742/743 and Omin bought NW's retired DC10).
If the entire airplane is very old(Near/@ the end of its economic life), the whole thing will be scarpped and the parts for sell. I had an interesting personal experience related to this: 12 yrs ago, I was traveling @ sea in F-class on a high-speed ferry in the Philippines. To my surprise, the seat I had was an old biz-class seat fm CX! So U can imagine how many diff ways these old cabin parts can ended-up being used for.

Hello people! & speedbird9468:
To get the cockpit/nose section(Section 41) of a broken-up 777 sold as parts, U guys will hv a better chance to look for it fm a broken-up 767. Design, shape, dimensions, interior layout are exactly identical while instrument panels are over 95% the same between the 2 types but many more 767s are retiring than 777s.

My profession is totally unrelated with aviation though I travel quite a lot so it's easier to get exposed to the airline biz at least fm the pax perspective. Reading & surfing the net about airline & commerical aerospace stuff is also 1 of my favourite hobby and that's how I learn about it bit by bit. I did major in Transportation & Logistics in college and after graduation, I tried for a few yrs to get into the airline biz and even applied for ATC trainee with the local Civil Aviation Authority but no one offered me a job = (
