Diff product/mkting strategies that's why.
For A, 318,319,320,321 are considered diff types within a single family or platform(i.e. A320 or A32x family). They did the same thing with 300/310 earlier. As U know, each type has physically diff size to target a specific capacity mkt segment. A probably want each type to stand more on its own in the mkt and want customers/pax perceive each type as more independent. Hence, relatively less connection in their names. Remember, when the original 320 came out in 88, the only other family A producing was 300/310. Labeling each type as independent could reinforce the mkt perception that A had a wider product line to compete with B and MD. The last 3 digits(i.e. -100, -200) denotes packaged difference in flying performance of a type in the family usually in terms of thrust, range, MTOW, etc. such as A320-100 vs A320-200. However, A is inconsistent later on with this naming strategy(Probably a strategic shift) for their A330 family where -200 and -300 actually refer to physical diff in size.
For B, the 737 brand name, unlike A320, has been around and achieved solid reputation since the 60s. As a result, it has more customer recognition(I don't mean everyone loves the 737. Just everyone, including pax not interested in aviation, knows exactly what's a 737) and therefore brand value. In addition, B pretty much already hv a product family for every mkt segment since the 767 came out in 82. There's less need to CREATE new names to emphasize a full product range. Therefore, it makes sense for Boeing to retain the full 737 designation in addition to whatever series suffix used in any variants/upgrades/derivatives of this aircraft family.
